Broccoli and Sprouted Lentil Soup
This recipe is an absolute all star. It's high in fibre, vitamin C, B vitamins, antioxidants and gelatin to name a few. You can use it as food as medicine when you're feeling run down, to support liver detoxification, for glowing skin, to support digestion and immunity.

Lentils are a great source of fiber, protein, folate, iron, zinc and B vitamins. The high fiber content helps regulate blood sugar levels and the insoluble fiber supports digestion and regulates bowel movements. The folate, iron and B vitamins support energy production and metabolism.
Legumes sometimes get a bad name because they contain phytic acid that act as "anti-nutrients" by binding and excreting minerals. Soaking/sprouting/activating lentils (and all legumes, nuts and seeds) reduces the phytic acid, making them easier to digest and increasing mineral bioavailability.
How to sprout lentils:
→ Soak the lentils in a bowl of water, cover with a cloth and leave on the countertop for 2-4 days. Drain and rinse the lentils 3-4 times a day.
